Coconut, Pomegranate & Date Drink


My brain has helpfully blocked most of the unpleasantness that accompanied my pregnancy, but there is one issue I do remember quite clearly: what the hell to drink? It wasn’t even that I missed drinking alcohol, I just missed drinking something exciting. Unpregnant people can always have an interesting cocktail, while the unfortunate ones who are in fact making sure human race survives maybe find a bar that’ll serve them a virgin mojito. If they’re lucky.

Since then, I’m always happy to see places that have a decent non-alcoholic beverage selection. To be fair, there has been a huge improvement in that department, even in Estonia. And sometimes, I make something for myself, just because. My recent (and the first ever, I think) Beverage Girl Crush is Colleen Jeffers, who makes wonderful drinks and whose Instagram feed (@colljeffers) is a constant source of delicious, boozy gorgeousness.

Yes, her recipes mostly contain alcohol, but I have simply gone ahead and adapted one of her latest cocktails for mornings instead of evenings. In her version, it’s a gin-coconut-pomegranate-cinnamon concoction, I have kept the coconut and pomegranate and played around with the rest. And added some rosewater. Because I can.

For one glass, take (approximately):
– 100 ml coconut milk
– 100 ml fresh pomegranate juice (the only difficult part of the process is squeezing the pomegranates)
– 1 generous teaspoon of natural date syrup (or use whatever you can get, I personally love this stuff and it goes well with the pomegranates)
– a splash of lime juice
– a tiny splash of rose water
– ice

Put everything in a blender. Blend. When smooth, pour into glasses and if all goes well, it’ll settle into a beautiful ombre effect. My version does it much less than Colleen’s, but that’s why she is a celebrated cocktail blogger and I’m not.

    This looks amazingly delicious!
    I recently had a nonalcoholic cocktail made with cucumber juice, lemon juice and raspberry juice in an Asian restaurant…it was quite good!
